Ingredients
- 200g (7 oz) sirloin steak, in 3cm / 1in cubes
- 250g (1 large) potato, in 2cm / 3/4in pieces
- 20g (1.5 tbsp) butter
- 12g (4 cloves) garlic, minced
- 1 tbsp (12ml) olive oil
- 1 tsp smoked paprika, 1/2 tsp fine salt, black pepper, flat-leaf parsley
Method
- Boil the potato pieces 8 min until a knife meets slight resistance, then drain and steam-dry in the hot pan for a minute.
- Pat the steak cubes properly dry and salt them. Wet steak greys instead of crusting.
- Get the cast iron smoking hot. Fry the potatoes in the oil, 8 min, turning only twice so each face crisps.
- Push the potatoes to the edge and put the steak in the clear middle in one layer.
- Sear 90 seconds a side and no more. These cubes are small and go from rare to grey in about a minute.
- Drop the heat to low, add the butter and garlic, and swirl for 45 seconds until it smells sweet.
- Toss everything together off the heat and finish with paprika, pepper and plenty of parsley.
