Ingredients
- 200g (7 oz) shrimp, peeled and deveined
- 70g (2.5 oz) rice noodles, dry
- 120g (2 cups) pak choi or spinach
- 30g (2 tbsp) soy sauce
- 15g (1 tbsp) honey
- 1 tbsp (12ml) sesame oil
- 12g (4 cloves) garlic, minced
- 6g (2 tsp) sesame seeds
- 1 tbsp rice vinegar, 1 tsp chilli flakes, 2 spring onions
Method
- Soak the noodles in hot tap water 12 min, drain and rinse cold.
- Pat the prawns completely dry and salt them lightly.
- Sear them in half the sesame oil over high heat, 75 seconds a side, then take them straight out. They are not done and that is correct.
- Lower the heat, add the rest of the oil and the garlic, and cook 45 seconds until fragrant, not brown.
- Add the soy, honey, vinegar and chilli flakes and let it bubble for 30 seconds.
- Add the noodles and the greens and toss for 90 seconds until the greens wilt and the sauce clings.
- Return the prawns and any juices for a final 30 seconds - that is where they finish cooking.
- Finish with sesame seeds and spring onion.
