Ingredients
- 170g (6 oz) cooked chicken breast, sliced
- 70g (2.5 oz) pasta, dry
- 100g (3 cups) romaine lettuce, torn
- 80g (1/3 cup) Greek yogurt, 0%
- 25g (1/4 cup) parmesan, grated
- 15ml (1 tbsp) lemon juice
- 3g (1 clove) garlic, crushed
- 1 tsp dijon mustard, 1 tsp worcestershire, 1/2 tsp salt, plenty of black pepper
Method
- Cook the pasta to the packet time, drain, and rinse under cold water. Rinsing is wrong for hot pasta and right for a salad.
- Whisk the yogurt, lemon, garlic, mustard, worcestershire, half the parmesan, salt and pepper into a dressing.
- Taste it before it meets anything. Caesar lives or dies on the salt and the lemon, and it is far easier to fix in the jug.
- Toss the cold pasta through two thirds of the dressing and leave it 10 min to absorb.
- Add the chicken and turn it through gently.
- Fold the lettuce in only at the last moment, with the remaining dressing.
- Finish with the rest of the parmesan and a lot of black pepper.
