Ingredients

  • 200g (7 oz) shrimp, peeled and deveined
  • 70g (1/3 cup) white rice, dry
  • 80g (1/3 cup) Greek yogurt, 0%
  • 15g (2 tsp) honey
  • 80g (1 medium) carrot, shredded
  • 80g (1/2 small) cucumber, sliced
  • 1 tbsp (12ml) olive oil
  • 6g (2 cloves) garlic, minced
  • 2 tbsp sriracha, 1 tsp rice vinegar, 1/2 tsp salt, sesame seeds, spring onion

Method

  1. Cook the rice: 70g to 140ml / generous 1/2 cup water, covered, 12 min, then 10 min off the heat.
  2. Stir the yogurt, sriracha, honey and vinegar together. Taste it now - this is the whole dish and it is easier to fix in the bowl than on the plate.
  3. Pat the shrimp dry and toss with the salt and garlic.
  4. Get the skillet properly hot. Sear the shrimp in the oil 75 seconds a side, no moving them around.
  5. Pull them off the heat the moment they turn opaque at the thickest part and curl into a loose C. A tight O means overcooked.
  6. Fluff the rice into a bowl and lay the carrot and cucumber along one side.
  7. Pile the shrimp on and spoon the sauce over the shrimp only, so the vegetables stay crisp.
  8. Finish with sesame seeds and spring onion.
