Ingredients

  • 170g (6 oz) chicken breast
  • 60g (1/3 cup) white rice, dry
  • 100g (1/2) cucumber - 60g grated, 40g diced
  • 60g (6-8) cherry tomatoes, halved
  • 30g (1/4 cup) feta, crumbled
  • 60g (1/4 cup) Greek yogurt, 0%
  • 1 garlic clove (3g), grated
  • 2 tsp (10ml) olive oil
  • 120ml (1/2 cup) water, for the rice
  • 1 tsp dried oregano, 1/2 tsp fine salt, juice of 1/2 lemon

Method

  1. Cook the rice in the 120ml water: boil, cover, lowest heat 10 min, rest 10 min.
  2. Grate 60g of the cucumber, then squeeze it hard in your fist over the sink. Tzatziki fails for exactly one reason and this is it.
  3. Mix the squeezed cucumber with the yogurt, grated garlic, half the lemon juice and a pinch of salt. Chill it.
  4. Season the chicken with the oregano, remaining salt and the rest of the lemon juice.
  5. Sear in the oil over medium-high 5 min a side, to 74C / 165F, then rest 5 min and slice.
  6. Build the bowl with the rice, the sliced chicken, the diced cucumber and the tomatoes.
  7. Spoon the tzatziki over and crumble the feta on last.

Tip: squeeze the grated cucumber until it stops dripping. Unsqueezed, it turns your tzatziki into a thin puddle within an hour in the fridge.
