Ingredients
- 170g (6 oz) cooked chicken breast, shredded
- 100g (scant 1/2 cup) Greek yogurt, 0%
- 60g (1 stick) celery, finely diced
- 40g (1/3 small) onion, finely diced
- 15ml (1 tbsp) lemon juice
- 6-8 baby gem or butter lettuce leaves
- 1 tsp dijon mustard, 1/2 tsp salt, black pepper, fresh dill
Method
- Shred the chicken by hand rather than chopping it. Torn edges hold dressing; knife-cut cubes shed it.
- Soak the diced onion in cold water for 5 min, then drain it hard. This takes the harsh raw bite out without cooking anything.
- Whisk the yogurt, lemon juice, mustard, salt and pepper together in the bowl first, before the chicken goes anywhere near it.
- Fold in the chicken, celery and drained onion.
- Add the dill and taste. It will need more salt and more lemon than you think - cold food reads blander than warm.
- Let it sit 10 min if you have time. The celery softens very slightly and the dressing stops tasting like plain yogurt.
- Separate the lettuce leaves carefully and spoon the salad in just before eating.
