Ingredients
- 160g (5.5 oz) flank steak
- 70g (2.5 oz) flat rice noodles, dry
- 80g (1) bell pepper, sliced thin
- 20g (4 tsp) soy sauce
- 2 tsp (8ml) sesame oil
- 1 tsp (5g) sesame seeds
- 2 garlic cloves (6g), minced
- 1cm ginger (4g), minced
- 1/2 red chilli, sliced
- 1 tbsp (15ml) rice vinegar
Method
- Cover the noodles with just-boiled water and soak until bendy but still firm at the core, about 5 min. They should be distinctly underdone.
- Drain and rinse them under cold water, then toss with 1/2 tsp of the sesame oil so they do not weld together.
- Freeze the steak 15 min, then slice across the grain no thicker than 3mm / 1/8in.
- Heat 1 tsp of the sesame oil in the wok over the highest heat. Sear the beef in one layer 90 seconds without stirring, then lift it out.
- Add the remaining oil and the pepper and stir-fry 2 min - blistered in places but still with a snap.
- Add the garlic, ginger and chilli for 30 seconds, then the noodles, soy and rice vinegar.
- Return the beef and toss 60 seconds until everything is coated and glossy. Finish with the sesame seeds.
Tip: underdo the soak badly. The noodles finish cooking in the wok, and fully softened noodles break into paste the moment you start tossing them.
