Ingredients
- 170g (6 oz) deli turkey
- 1 large (70g / 10in) flour tortilla
- 25g (2 rashers) streaky bacon
- 40g (1 cup) romaine lettuce, shredded
- 50g (1/2) tomato, sliced
- 30g (2 tbsp) Greek yogurt, 0%
- 1 tsp Dijon mustard, 1/4 tsp black pepper
Method
- Lay the bacon in a cold dry pan and turn the heat to medium. Starting cold renders the fat out instead of scorching it.
- Cook 6-8 min, turning once, until properly crisp, then drain on kitchen paper.
- Stir the yogurt with the Dijon and pepper.
- Warm the tortilla 15 seconds a side so it folds cleanly.
- Spread the yogurt across the middle third, leaving 5cm / 2in clear at each end.
- Layer the turkey, then the tomato, then the lettuce, then the bacon snapped into pieces.
- Fold the two ends in and roll tightly from the long edge. Slice on the diagonal.
Tip: pat the tomato slices dry before they go in. Tomato is the single wettest thing in a club and it is what turns the wrap to paste by lunchtime.
