Ingredients
- 60g (2/3 cup) rolled oats, dry
- 150g (2/3 cup) Greek yogurt, 0%
- 120ml (1/2 cup) skimmed milk
- 30g (1 scoop) whey protein, vanilla
- 80g (2/3 cup) mixed berries
- 16g (1 tbsp) peanut butter
- 1/2 tsp cinnamon, pinch of salt
Method
- Stir the whey into the milk first, on its own, until there are no lumps. Powder added to the oats never fully disperses and you find dry pockets in the morning.
- Add the yogurt, cinnamon and salt to the milk and whisk smooth.
- Fold in the oats. The mix should look slightly too wet - the oats take up more overnight than you expect.
- Spoon into a jar, leaving 2cm / 1in at the top for the fruit.
- Press the surface flat and cover. Air pockets go dry and chalky.
- Refrigerate at least 6 hours, ideally overnight.
- Top with the berries and peanut butter in the morning, not the night before - berries added early bleed and turn the whole jar purple.
