Ingredients

  • 170g (6 oz) salmon fillet, skinless, in 3cm / 1in cubes
  • 10g (1.5 tsp) honey
  • 10g (2 tsp) soy sauce
  • 1 tsp (3g) sesame seeds
  • 1 garlic clove (3g), minced
  • 1 tsp sriracha, 1/4 tsp fine salt
  • 2 spring onions, sliced

Method

  1. Preheat the air fryer to 200C / 400F for 3 min.
  2. Pat the salmon cubes properly dry and season with the salt. Wet fish steams in an air fryer.
  3. Cook 6-7 min in one layer, no oil - salmon renders plenty of its own.
  4. While it cooks, stir the honey, soy, sriracha and garlic together.
  5. Tip the hot bites into a bowl and pour the glaze over, tossing to coat. The residual heat thickens it without cooking the sugar.
  6. Return them to the basket for 60 seconds only, just to set the glaze.
  7. Finish with sesame seeds and spring onion.

Tip: glaze after cooking, not before. Honey in an air fryer at 200C burns onto the basket long before the fish is done, and it is miserable to clean.
