Ingredients
- 2 eggs (100g)
- 120g (1/2 cup) Greek yogurt, 0%
- 60g (2 scoops) whey protein, chocolate
- 60g (1/2 cup) almond flour
- 30g (5 tbsp) cocoa powder
- 50g (2.5 tbsp) honey
- 30g (1 oz) dark chocolate, 85%, chopped
- 1 tsp baking powder, 1 tsp vanilla, 1/2 tsp salt
Method
- Heat the oven to 175C / 350F and line a 12-hole muffin tin with cases.
- Whisk the eggs, yogurt, honey and vanilla together first.
- Sift the whey, almond flour, cocoa, baking powder and salt over the top and fold until just combined.
- Stop folding the moment there are no dry streaks. Whey toughens dramatically when overworked - this is the main way protein brownies go rubbery.
- Fold in two thirds of the chopped chocolate and divide between the cases.
- Press the remaining chocolate into the tops.
- Bake 14-16 min ONLY. They must come out looking slightly underdone in the middle.
- Whey continues cooking in the residual heat, so a brownie baked until it looks right in the oven is dry by the time it cools. Leave them in the tin 10 min, then move to a rack.
