Ingredients
- 170g (6 oz) cooked chicken breast, shredded
- 80g (1/3 cup) Greek yogurt, 0%
- 30g (1 oz) bacon, cooked and crumbled
- 25g (1/4 cup) parmesan, grated
- 15ml (1 tbsp) lemon juice
- 10ml (2 tsp) olive oil
- 3g (1 clove) garlic, crushed
- 6-8 romaine or baby gem leaves
- 1 tsp dijon, 1 tsp worcestershire, 1/2 tsp salt, black pepper
Method
- Whisk the yogurt, lemon, oil, garlic, dijon, worcestershire, half the parmesan, salt and pepper into a dressing.
- Taste and adjust before the chicken goes near it - a Caesar that is under-salted in the bowl is under-salted on the plate.
- Fold the shredded chicken through until every piece is coated.
- Let it sit 10 min. The chicken takes on the dressing and the garlic loses its raw edge.
- Separate the lettuce leaves carefully, keeping them whole and cup-shaped.
- Fill the leaves only when you are ready to eat. Salt draws water out of lettuce and a filled leaf is limp in twenty minutes.
- Top with the crumbled bacon, the rest of the parmesan and a lot of black pepper.
