Ingredients

  • 200g (3/4 cup) Greek yogurt, 0%
  • 15g (1/2 scoop) vanilla whey protein
  • 80g (2/3 cup) mixed berries
  • 30g (1/4 cup) granola
  • 10g (1.5 tsp) honey
  • 1-2 tbsp (15-30ml) water, to loosen

Method

  1. Put the yogurt in a bowl and add the whey in three additions, not all at once.
  2. Whisk hard after each addition until smooth. Tipping the whole scoop in creates dry lumps that will not beat out afterwards.
  3. If it stiffens past spoonable, loosen with water a tablespoon at a time rather than milk, which adds carbs you did not budget for.
  4. Cover and rest it in the fridge 10 min. Whey needs that time to hydrate, and it loses the chalky edge.
  5. Stir once more and smooth the top flat.
  6. Add the berries and granola only when you are about to eat, then drizzle the honey over.

Tip: the 10 minute rest is what separates this from drinking a shake out of a bowl. Skip it and the texture stays grainy no matter how hard you whisk.

KeepsThe whisked yogurt base keeps 3 days covered in the fridge. Add granola and berries at the table - stirred in ahead, granola turns to wet sand within the hour.
