Ingredients
- 150g (5.5 oz) deli turkey, sliced
- 60g (1/4 cup) cream cheese, light
- 80g (1/2 small) cucumber, in thin batons
- 60g (2 cups) baby spinach
- 1 tsp dijon mustard, black pepper, fresh dill
Method
- Stir the mustard, dill and plenty of black pepper into the cream cheese until it is soft enough to spread.
- Lay the turkey slices out flat, overlapping two slightly where they are thin.
- Spread a thin layer of cream cheese right to the edges. A bare edge is where the roll comes apart.
- Lay spinach leaves down, then the cucumber batons in a line along one end.
- Roll tightly from the cucumber end, pressing gently as you go.
- Chill 15 min seam-side down before cutting - warm rolls unravel under the knife.
- Cut on the diagonal with a sharp knife, wiping the blade between cuts.
