Ingredients
- 400g (1.75 cups) Greek yogurt, 0%
- 200g (3/4 cup) cream cheese, light
- 60g (2 scoops) whey protein, vanilla
- 80g (2/3 cup) rolled oats, dry
- 40g (2 tbsp) honey
- 30g (2 tbsp) peanut butter
- 160g (1.25 cups) mixed berries
- 1 tsp vanilla, pinch of salt, mint to finish
Method
- Blitz the oats with the peanut butter and half the honey into a rough crumb, then press into the bottom of four glasses.
- Press it down firmly with the back of a spoon. A loose base floats up through the filling.
- Beat the cream cheese on its own until completely smooth before anything else joins it. Lumps at this stage never come out.
- Add the yogurt, whey, remaining honey, vanilla and salt and beat until thick and glossy.
- Taste it. Whey brands differ enormously in sweetness and this is the moment to adjust, not after it sets.
- Spoon over the bases and tap each glass on the counter to settle it flat.
- Chill at least 3 hours. It firms considerably and the whey flavour fades as it sits.
- Top with berries and mint just before serving.
